Veggie Fried Rice in 3 Easy Steps
I have been meaning to post my recipe for Veggie Fried Rice for a couple of months now. I had just never made it a priority, but once my husband came home and asked for this vegan, healthy, and easy meal for the zillionth time I decided the world deserved to know about it once and for all. This recipe is very basic, and you could easily add meat or different spices to change it up a bit. And guys, I promise, this recipe is great even for the veggie hater. I definitely used to be a veggie hater, but garlic salt changed the game for me.
So. Now for the world’s easiest (healthy) meal ever!
Drum roll please………….
- Veggies of your choice (I usually do broccoli, cabbage, carrots, & peas)
- Brown Rice
- Garlic Salt
- Olive Oil
- Saute your veggies with olive oil and garlic salt on medium heat until soft. I chop my cabbage into thin 1″ strips, buy the pre-shredded carrots, and break apart the broccoli florets for personal preference. I buy frozen peas and broccoli, and heat them in the microwave for a couple of minutes before sauteing with the rest of the veggies.
2. While sauteing your veggies, cook brown rice according to the package instructions. Seriously though. Follow the instructions, or you will burn the house down. Speaking from experience. Also, making your rice with a broth (veggie or chicken) instead of water adds that much more flavor to your dish!
3. Combine veggies & rice, and add more garlic salt, salt, and pepper to taste if needed.
And that’s it!
Like I said, you could easily add shrimp, chicken, or whatever spices you wanted to change up the flavor! We also sometimes pair this with a baked sweet potato. Delish!
There are some nights that nothing tastes as good as easy does. Can I get an amen?
